Instructions
Preheat oven and prepare pan
Preheat your oven to 350°F (175°C). Grease a mini muffin pan or donut hole pan.
Mix dry ingredients
In a bowl, whisk together flour, sugar, baking powder, baking soda, apple pie spice, and salt.
Add wet ingredients
In another bowl, whisk together sparkling apple cider, egg, melted butter, and vanilla. Pour into the dry mixture and stir until just combined.
Fill and bake
Spoon the batter into the pan, filling each cavity about 2/3 full. Bake for 10–12 minutes, or until a toothpick comes out clean.
Coat with cinnamon sugar
While warm, brush each bite with melted butter, then roll in cinnamon sugar mixture until coated. Serve warm or at room temperature.
